The Best Ever Chili! (AIP)

This recipe is AMAZING and tastes just like chili! I am a huge chili fan and have been missing it since switching to a paleo and night-shade free way of eating! This recipe is also gluten free, dairy free, sugar free and is anti-inflammatory!

Why is this recipe so awesome?!
1. Homemade Pasture Raised, Organic Chicken Bone Broth!
Bone broth is one of the most nourishing and healing foods. It contains high amounts of glycine, glutamine and collagen. These all work together to strengthen our connective tissue, repair our gut lining (leaky gut) and support our HPA axis since most of us are running around super stressed and burnt out (HPA Axis Dysregulation)
2. Organic Coconut Oil
Coconut oil! This is an amazing, healthy saturated fat (yes! you heard me, saturated fats can be healthy for you!). We actually need saturated fats to create our hormones and to balance them. Balance hormones have a huge impact on our overall health since hormones are chemical messengers that allows all areas of our bodies to talk!
3. Turmeric + Ginger
These beautiful roots are super anti-inflammatory, nourishing and calming to both our nervous system and digestive system! Not to mention, they are super yummy!
4. Garlic + Onions
These are 2 of my favorite prebiotic foods to help feed all the good bacteria. They also contain potent phytochemicals to strength our immune system, fight off infections like Candida Overgrowth and help us get a good night sleep.
5. Parsley
This herb is a potent anti-oxidant that helps fight off cellular damage to our livers. This is super important because the liver has over 500 known functions and we haven’t even fully mapped out all of the amazing things our liver does for us! Keeping it healthy and happy is critical to a long health and happy life!
6. Sweet Potato Puree + Carrots
These awesome orange vegetables contain high amounts of the basis for vitamin A, beta-carotene! Our body converts beta-carotene into its active form, vitamin A. Vitamin A is critical for the health of our eyes and this is why it is highlighted here! We spend so much of our days looking at computer screens or our cell phones that we are damaging our eyes! The best way to protect our eyes from all of this blue-light exposure is to provide them with the proper nourishment, vitamin A!

The Best Ever Chili! (AIP)

ZERO beans, tomatoes, bell peppers, or chili spices were used in this recipe, yet it tastes exactly like chili! This is an anti-inflammatory meal that will leave you feeling full and satisfied!

Ingredients
  

  • 2 tbsp coconut oil
  • 1/2 big red onion chopped
  • 5 large garlic cloves crushed and chopped
  • 1 lb ground turkey pasture raised
  • 1 tbsp dried oregano
  • 2 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp ground turmeric
  • 1 in organic ginger root minced with the peel on
  • 4 large carrots skin on and chopped
  • 4 small zucchini squash chopped
  • 2 cups sweet potato puree
  • 3 cups chicken bone broth
  • 1/2 lemon, juiced

Instructions
 

  • Add coconut oil to a large pot over medium high heat. Add the onions and allow to caramelize, stirring occasionally. Add the garlic once the onions are cooked down.
  • Move the onions and garlic over to the side of the pot and add the ground turkey to the pot. Lay out flat and allow the turkey to brown on the one side. Once browned, flip to allow the other side to brown. It does not have to be cooked all the way through. Using a wooden spoon, break the turkey into large, bite-sized chunks and mix with the onions and garlic.
  • Add the ginger, oregano, basil, parsley and carrots to the mixture and stir. Once combined, add the 2 cups of homemade sweet potato puree, bone broth, zucchini, and fresh lemon juice. Stirring to combine.
  • Cover pot with lid and turn the heat to high. Let it come to a gentle boil, reduce heat and uncover. Allow to simmer for 20-30 minutes, until desired doneness of vegetables.
  • Enjoy chili with fresh parsley, and salt to taste!
