This is a recipe I make over and over again! I make it many different ways and with different flavors! This is an awesome base recipe that is delicious on its own or with additional add in’s!
This is my favorite banana muffin recipe because..
1. It is sooooo easy and quick!
2. Contains ZERO sugar, sugar alcohols, stevia or natural sugars
3. No complicated steps
4. You can not mess it up!
5. You can add anything you want to it to change it up!
I hope you enjoy these delicious muffins that I make for my family. They are snack at work or a healthy travel snack when access to healthy, nourishing foods are hard to come by!
Healthy One-Bowl Banana Muffins! (DF+GF+SugarFree)
Ingredients
- 5 ripe bananas
- 2 cups sprouted, gluten free, organic oats I use One Degree!
- 2 pasture raised eggs VEGAN OPTION: 2 flax eggs
- 1 tsp organic baking soda aluminum free
- 1 tbsp ceylon cinnamon
- 2 tsp organic, vanilla extract I use Simply Organic Vanilla Extract
- 1/3 cup add on's see note for more details!
Instructions
- Preheat oven to 350 degrees F. Place 12 parchment paper cups in a muffin tin
- Mash the bananas well, place in a large bowl.
- Separate 1.5 cups of oats and blend until they are course flour. Add this course flour, the other 1/2 cup of oats, eggs, baking soda, cinnamon and vanilla to the bowl with the bananas
- Mix all ingredients until well combined.
- Add in your "add on" and fold into the mixture.
- Scoop batter into parchment paper muffin cups, dividing evenly among the 12 muffin cups. I use a 1.5 tbsp cookie scoop to do this and each muffin gets about 2 scoops
- Bake for 12-15 minutes, until a tester inserted into the middle of a muffin comes out clean. Let cool completely in the pan.
- Remove the muffins once they are cooled and store in an air-tight container and enjoy!

- PALEO OPTION
- substitue oats for Bob’s Red Mill’s Paleo Baking flour. (2 cups of Paleo Baking Flour)
- VEGAN OPTION
- use 2 flax eggs. Mix 1 tbsp of ground flaxseeds with 2.5 tbsp of filtered water and let it sit for 10 minutes.
Can personally say these are amazing! Sweet sweet Alex made these for her bridesmaids on her wedding day and that was when I first tried them! 💓👌Guaranteed crowd pleaser!
