4-Ingredient Chia Seed Pudding

This is my GO-TO snack! It is delicious, easy to prepare ahead of time, and is loaded with nutrients! I have to admit, I eat this everyday!

Why is this recipe so awesome?!
1. Chia Seeds
Chia seeds are one of the healthiest foods on the planet. They are a super food and here’s why! These little seeds have been studied extensively and have more then 10 health benefits, supported by science. The three top reasons I consume chia seeds are because of they are very high fiber, they contain high quality protein, and are loaded with Omega-3 fatty acids (Anti-Inflammatory!! Download my Guide to the right to get more info on this!). Lets talk about fiber, fiber is essential for a strong and healthy gut. Fiber feeds the good bacteria and also brings nutrients along to the cells at the end of our colon! It makes sure you have awesome regular poops! By weight, chia seeds are 14% protein, which is really high for a plant protein. They contain almost all of the essential amino acids, making it very close to a complete protein source. Omega-3 fatty acids are a potent anti-inflammatory! Some inflammation is good, but chronic, uncontrolled inflammation causes damage to our bodies and we want to reduce that! These little seeds are a great way to do that!
2. Antioxidants
Chia seeds and fruit are both very high in antioxidants. Antioxidants protect our bodies against free-radical damage and uncontrolled cell growth and division (AKA cancer). I use a variety of fruit from wild organic blueberries, organic pomegranate seeds, organic dark sweet cherries, organic strawberries, and any other fruit you can think of! All fruits contain high amounts of antioxidants to protect our bodies!

4-Ingredient Chia Seed Pudding

This recipe is easy to make in batches, in a big jar or in individual portion jars. This is a delicious snack that provides tons of fiber, protein and omega-3's to nourish your body!

Ingredients
  

  • 1/4 cup Dairy-free milk of choice unsweetened. I use coconut milk
  • 1 tbsp Chia Seeds heaping
  • 1 tsp Raw Honey or Real Maple Syrup Optional. See Notes
  • 1/4 cup Frozen Fruit See Notes

Instructions
 

  • Pour 1/4 cup of dairy-free milk and chia seeds to a 250mL wide-mouth mason jar. Put lid on and shake well to mix up the dairy-free milk and the chia seeds. Let it sit for a few seconds and then shake again.
  • Let it set in the fridge for 10-30 mins. Once it is set you can add the frozen fruit and enjoy or wait until the fruit melts. They will keep for 4-5 days in the fridge.

Notes

Batch Preparing – I like to make 5 at a time on Sunday and then they are ready for the week. I add the frozen fruit to the jar in the morning and take it with me for as a snack.
Sweet Enough – I find that this recipe is sweet enough without the raw honey or maple syrup. The fruit gives it the perfect amount of sweetness.
Frozen Fruit – I like to use frozen fruit since it is cost effective and I can get high quality fruit all year round.
